Onions make our eyes go “ouch!” But the same sulfur that stings our eyes helps us shed pounds. Onions also help us protect vulnerable hearts and circulatory systems from the effects of weight gain.
1. Onions help you fill up. This round little veggie is abundant in sulfur compounds and antioxidants that reduce inflammation in the body. That’s important because Harvard scientists have discovered that inflammation weakens your “I’m full” signal. And that makes it harder to put down your fork. But onions curb inflammation, so they make it easier to feel full.
2. Onions defend your heart. Overweight people have a greater risk of cardiovascular disease. Onions help protect your heart with chromium. In a 2005 study at Johns Hopkins University, men with high levels of chromium had 35 percent fewer heart attacks than men with low levels of chromium.
One cup of onions provides 20 percent of the Daily Value (DV) for chromium. Most Americans are deficient in chromium, due to a diet of processed and refined foods that lack nutrition.
3. Onions Increase HDL. Beware of bad fats! They inflame your heart, clog your arteries and put you at risk for heart disease. Onions support “good” HDL cholesterol that attaches to “bad” LDL, helping to eliminate it before it wreaks heart havoc. In one recent study at Tufts University, people who ate a raw onion every day saw 30% increases in their HDL.
Raw onion isn’t always appealing. Not to worry: cooking onions doesn’t hurt their healing potential. Sautéed over low heat in butter or coconut oil, onions can be added to all the other Weight Loss Superfoods like wild salmon, grass-fed meat, omega-3 eggs or a veggie stir-fry. Onions go with almost everything, so enjoy them often!
You can avoid the eye-watering effect of sulfur by placing onions in the freezer for 20 minutes before you cut them.
