3-Grain Porridge with Berries and Milk

On a cold winter morning when your joints are aching, there is nothing better than this heartwarming healthy porridge. The satisfying texture of the whole grains infused with smoky cinnamon, nutmeg and the citrusy crispiness of coriander combine with your favorite fresh berries to up the inflammation- fighting properties even more.

Ingredients

  • 1/4 cup oats steel cut
  • 1/4 cup hulled barley
  • 1/4 cup brown rice
  • 1 cup water
  • 2 tablespoons honey
  • 2 teaspoons nutmeg ground
  • 2 teaspoons coriander ground
  • 2 teaspoons cinnamon
  • 1 cup berries blackberries, strawberries, raspberries, fresh or frozen
  • 2 cups milk

Directions

Combine all ingredients except for berries and 1 cup milk in a medium saucepan. Bring to a simmer and cook for about 40 minutes or until mixture reaches a thick porridge-like consistency. Top with remaining milk and berries.

TIPS AND NOTES:

This is a great breakfast to make the night before and heat up in the morning. Try different toppings like nuts, dried fruit or yogurt.

Hulled barley is the whole grain version of pearled barley, which is a refined grain.
