Joint-Cooling Baked Chicken Kabobs with Spicy Berry Salsa

I adore this combo of sweet berries and succulent chicken. Use the sweetest fruit you can find for a huge burst of flavor. Those berries are also bursting with anti-inflammatories that help you loose weight and walk with ease. And grass-fed chicken is loaded with anti-inflammatory omega-3 fats, which joints love. Meanwhile, chili blocks joint pain. Yeeha!

Ingredients

    kabobs:

    • 4 grass-fed chicken breasts, 4-6 oz each cut into 1-1 1/2 inch strips
    • 1 lemon(s) juice of
    • 1 tablespoon olive oil pure

    Salsa:

    • 1/2 cup strawberries diced
    • 1/2 cup raspberries chopped
    • 1/2 cup blackberries chopped
    • 1 large jalepeno(s) diced
    • 2 lime(s) juice of

    Directions

    Preheat the oven to 400 degrees.

    Thread the chicken lengthwise onto 4 inch skewers and coat in the lemon juice and olive oil. Bake for 15-20 minutes or until cooked through.

    Combine all ingredients for the salsa and mix gently.

    Serve the kabob with the salsa over the top and whole fruit as garnish.

    TIPS AND NOTES:

    Add some cilantro or green onion to the salsa. For a smokier flavor grill the kabobs on an outdoor grill or a grill pan on the stove.
