Ingredients
- 1 1/2 cups almond meal or almond flour
- 3 tablespoons butter
- 1 tablespoon Slimtevia
- 2 ounces chocolate semisweet
- 16 ounces farmers cheese light cream cheese
- 8 ounces cream cheese
- 1/3 cup Slimtevia
- 1/2 cup unsweetened cocoa
- 2 tablespoons cornstarch
- 1 egg
- 2 egg whites
- 2 teaspoons instant espresso powder
- 2 teaspoons vanilla extract
- 1 cup fresh raspberries
Directions
1. Postion the racks in the lower and upper 1/3 of oven. Put a small roasting pan on the lower rack filled with water. Preheat the oven to 325 degrees F. Lightly coat a 9 inch springform pan with cooking spray and line with parchment paper on bottom.2. Crust; Mix almond meal, slimtevia, and melted butter. Press into bottom of pan and freeze until firm about 15 minutes.
3. Filling: Put the chocolate in a bowl in the microwave and melt, about 1 minute. Stir until smooth. Blend farmers cheese, cream cheese, slimtevia, cocoa, and cornstarch in food processor or electric mixer. Add the egg, egg whites, espresso, and vanilla. Pulse or Mix until smooth. Add the chocolate and pulse or mix until just combined. Pour over prepared crust.
4. Put the pan on the upper rack in the oven and bake until just set, about 50 minutes. Turn off the oven and let stand in oven for 1 hour.
5. Remove from oven and cool for 2 hours on wire rack. Chill overnight.
6. Remove from pan and serve with fresh raspberries.
