Fava Bean Soup with Spicy Greens for Diabetes
Fava beans are one of my absolute favorites because of their buttery texture and nutty flavor. This soup shows off them off brilliantly with its rich creamy body and spicy hot greens. And what good medicine: beans rope, wrangle and hog-tie those blood sugar spikes for a full day after you eat them.

Ingredients
- 1 cup orange juice
- 1/4 cup red wine vinegar
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1-2 tablespoon hot sauce
- 3 cloves garlic minced
- 1 bunch greens (kale, collard or mustard) washed and chopped
- 1 tablespoon pure olive oil
- 1 small onion roughly chopped
- 4 cups bone broth
- 3 cups fava beans canned, drained and rinsed
Directions
In a large saute pan, combine the orange juice, vinegar, honey, mustard, hot sauce and garlic.When the mixture comes to a simmer, add the greens and lower the heat. Simmer for 15-25 minutes or until greens are tender and liquid is reduced.
While the greens are cooking, heat the olive oil on medium heat in a separate stock pot and saute the onions for 5-7 minutes. Add the stock and beans and cook for 15-20 minutes more.
Puree the soup until smooth and serve topped with the greens.
TIPS AND NOTES:
Try this soup with butter or white beans if you can't find fava. And if you don't like the flavor of kale or collards, try spinach instead. Bone broth recipe posted separately.
