Joint-Happy Salmon Burger with Citrus Dressing
Simple yet exquisite, I love this arthritis-healing burger. And I adore the sweet but tangy sauce that pairs perfectly with the savory salmon. It’s all loaded with joint-cooling omega-3 oils and other anti-inflammatories from the wild salmon, eggs, garlic, whole grains, walnuts, yogurt, and orange juice.

Ingredients
Burgers:
- 12 ounces canned wild salmon
- 1 medium egg beaten
- 3 cloves garlic minced
- 1/2 cup whole wheat breadcrumbs
- 1/4 cup walnuts crushed
- 1 tablespoon grapeseed oil or coconut oil
Sauce:
- 1/2 cup plain yogurt
- 1 tablespoon lemon juice
- 1 tablespoon orange juice
- 1 teaspoon honey
- 1 tablespoon fresh ginger minced
Directions
Lightly drain the salmon and combine it with the egg, garlic, breadcrumbs and walnuts in a bowl and mix gently.Form into patties and saute in the oil for five minutes on each side.
In a bowl, combine yogurt, lemon juice, honey, ginger, and orange juice and mix well.
Top the burgers with yogurt sauce.
TIPS AND NOTES:
You can serve these burgers on whole grain buns.
