Pizza On-the-Fly for Diabetes
This home-made, healthy pizza delivers...incredible flavor and a crisp, delicious crust. It takes just minutes to prepare. Ingredients

- 1 teaspoon pure olive oil
- 1 cup fresh spinach chopped
- 1 clove garlic minced
- 1/2 cup mozzarella cheese grated
- 1 small tomato sliced
- 1/4 cup fresh basil chopped
Directions
Preheat the oven to 425 degrees.Brush the tortillas with the pure olive oil and bake for 3-4 minutes or until they start to crisp.
Heat 1 tablespoon of water in a sauté pan and cook the spinach and garlic for 2-3 minutes.
Take the tortillas out, layer them with the cheese, spinach and tomatoes and bake for 3-5 minutes more or until cheese is melted.
Garnish with the chopped basil and cut into slices.
TIPS AND NOTES:
For a chewier crust don’t prebake the tortilla. Try adding a little marinara or pesto to give more moistness. Use any of your favorite veggies or healthy toppings to make these pizzas your favorite comfort food!
