Spicy Buffalo Chicken “Fings” with Blue Cheese Dip

Traditional Buffalo wings are deadly for diabetics. They’re loaded with inflammatory oils that aggravate the disease, jack up heart troubles and keep you hungry. Swap all that for our broiled, tender and spicy BBQ chicken finger “fings” . They’re mighty tasty with our yogurt blue cheese dip. That way you'll get fats that fight inflammation, succulent flavor and a quicker sense of satisfaction, which means its easier to stop eating!

Ingredients

    Marinade:

    • 1 cup tomato puree
    • 3 cloves garlic minced
    • 1/4 onion(s) minced
    • 6 chipotle peppers (with adobo sauce), minced

    Chicken:

    • 3/4 pound chicken boneless, cut into bite-size pieces

    Blue Cheese Dip:

    • 1/2 cup yogurt
    • 1/2 cup ricotta or cottage cheese
    • 1/4 cup blue cheese crumbled

    Directions

    Combine all the ingredients for the marinade in a shallow casserole dish.

    Cut the chicken into bite sized pieces and place them in the marinade, stirring to cover all sides. Marinate in the refrigerator for at least thirty minutes or overnight.

    In a blender or food processor combine the yogurt and cottage cheese and blend until smooth. Stir in the blue cheese chunks by hand.

    Take the chicken out of the marinade and place in a single layer on a baking sheet.  Broil for 5-7 minutes or until caramelized and cooked through.



    TIPS AND NOTES:

    In a saucepan heat the leftover marinade to a simmer and serve as an additional dipping sauce.    You can use the blue cheese dip with fresh veggies or as a salad dressing so make a double batch for dinner during the week.

    Remember to use grass-fed chicken to get the most benefit from this recipe.  That's the source of the anti-inflammatory omega-3 oils.

    The salt content of true blue cheese is pretty darn high...  You can make this dip less salty by using feta and ricotta cheeses instead of blue and cottage cheeses.
