Spinach Feta Dip with Spelt Bread Toast
Fuel yourself up during the big game with this diabetes healing dip. It’s deceptively creamy, rich, and flavorful, but its chock full of diabetes-healing superfoods. Spinach contains natural compounds that squash diabetes-inducing inflammation like a superstar linebacker on a defenseless quarterback. And the omega-3 fats in grass-fed dairy do the same. Ingredients
Dip:
- 1 cup spinach fresh, chopped
- 2 onions(s) green, sliced
- 1 clove garlic minced
- 1/2 cup feta cheese crumbled
- 1/4 cup sour cream
- 1/2 cup yogurt plain
Toast:
- 4 slices spelt or whole grain bread cut into triangles
- 1 tablespoon olive oil pure
- 2 teaspoons garlic powder
Directions
Preheat the oven to 350 degrees.Combine all the dip ingredients in a bowl and mix well.
Transfer to a shallow casserole dish and bake for 15 – 20 minutes or until hot and bubbly.
While the dip is cooking place the bread in a single layer on a baking sheet, drizzle or brush with the olive oil and sprinkle with the garlic powder.
Bake for 7-10 minute or until crispy.
Serve the dip hot with the toast points.
TIPS AND NOTES:
Add extra veggies to kick up the health factor such as artichoke hearts or bell peppers. If you like some kick add a minced jalapeno or other hot pepper to the mix. You can also experiment with different spices on the bread such as cumin, onion powder, rosemary or a touch of cayenne.
