Fuel yourself up during the big game with this diabetes healing dip. It’s deceptively creamy, rich, and flavorful, but its chock full of diabetes-healing superfoods. Spinach contains natural compounds that squash diabetes-inducing inflammation like a superstar linebacker on a defenseless quarterback. And the omega-3 fats in grass-fed dairy do the same. Garlic is a third anti-inflammation warrior, onion reduces insulin resistance, and whole grains keep blood sugar stable. So dip away!

Ingredients

    Dip:

    • 1 cup spinach fresh, chopped
    • 2 onions(s) green, sliced
    • 1 clove garlic minced
    • 1/2 cup feta cheese crumbled
    • 1/4 cup sour cream
    • 1/2 cup yogurt plain

    Toast:

    • 4 slices spelt or whole grain bread cut into triangles
    • 1 tablespoon olive oil pure
    • 2 teaspoons garlic powder

    Directions

Preheat the oven to 350 degrees.

Combine all the dip ingredients in a bowl and mix well.

Transfer to a shallow casserole dish and bake for 15 – 20 minutes or until hot and bubbly.

While the dip is cooking place the bread in a single layer on a baking sheet, drizzle or brush with the olive oil and sprinkle with the garlic powder.

Bake for 7-10 minute or until crispy.

Serve the dip hot with the toast points.

    TIPS AND NOTES:

Add extra veggies to kick up the health factor such as artichoke hearts or bell peppers.  If you like some kick add a minced jalapeno or other hot pepper to the mix.  You can also experiment with different spices on the bread such as cumin, onion powder, rosemary or a touch of cayenne.
